GUILTY!
I just want to express my guilt right now. I am supposed to be at work today washing cars. No, this is not my sideline job. Our school-age group is planning on a field trip but the parents can not afford it because the budget is little high. So, the teacher came up to this car washing idea to raise fun which is actually a good idea. They asked me couple weeks ago if I’m willing to volunteer. I said yes not knowing the date yet. Too bad because yesterday the assistant director asked me if I’m coming and what made it bad? I answered her yes before asking her when. It turned out that the car washing was today. I was tired. My mind and my body were not ready for this. Or in short, I was being lazy today. I can still feel the guilt right now. Are they going to fire me for this? Or if they won’t, may be they won’t trust me anymore. Well, que sera. May be I should start looking for another place before it’s tooooo late.

PRINTER!
I googled outdoor toy pictures for my kids’ art tomorrow and I already printed 3 of them, but the paper got stuck in the printer. I hate it! It happened again. Now, I can’t finish printing these pictures because I don’t know how to take the paper out of the printer. No one can help me right now. My hubby is still at work. It is frustrating because I have no idea on how to handle this kind of problem. I wasn’t watching when my hubby fixed it the first and second time I did this. Hell, I was sleeping. He fixed it in the middle of the night when he came home from work. I wanted to try but I’m scared I might break the printer or whatever. I don’t want to cause more trouble. This may be the simplest problem for you guys but not to me. Sorry!

IT'S OUR ANNIVERSARY!
Today is our special day. It’s our Second Wedding Anniversary. Wow! We’re married for two years already. Anyway, we did not do anything special today. We’re both working in different schedule. He works nights. I work day. But we’ve been celebrating our anniversary since Friday. It was a three-day celebration actually. I’m so glad that we had a long weekend. The longer the weekend, the longer I can spend my time with my husband. I miss him everyday and I love him everyday.

LOMPIA!

Joy's simple and easy version of Lompia recipe:
Ingredients:
1 lbs. Ground Pork or Beef
1/2 cup chopped onions
2 beef cubes
3 tbsp. Soy sauce
2 tbsp Oyster sauce
2 Bay leavesPinch of a black pepper
1 pack Bean sprout or 1 lb.2 cups Cabbage (Sliced thinly)
2 pieces Carrot (sliced 1 1/2" length thin)
1 pack of Lompia wrapper
Procedures:
First, put oil or olive oil and onions in your pan and fry until golden brown. Add the ground beef or ground pork, make sure that the ground beef is smashed and let it cooked for about 5 minutes. Add the beef cubes, soy sauce, oyster sauce, bay leaves, black pepper and let it boil for 5 minutes then add the carrots, cabbage and bean sprouts. Stir it and leave it for another 5 to 7 minutes, then drain it. Let it cool so it's ready to wrap. Easy and quick, you can deep fry it for as long as you want or let it brown a little and you can put some in your freezer to serve later.
Note: Just follow the instruction of the Lompia wrapper on how to wrap properly.

LONG WEEKEND AHEAD!
I am excited for this weekend to come. I love it. It’s a long weekend. A three-day relaxation sounds good. Although, I still have to do household chores but its fine. Household chores aren’t that stressful. There isn’t much to do at home. Actually, sometimes I feel bored during the weekends especially when my husband is busy doing stuff for his computer. But may be not this weekend.
